WINEMAKING

The Grenache fruit was selectively handpicked from 120-year-old bush vines.

Gently destemmed and cold-soaked for 14 days.

Slowly fermented for a further 14 days, then gently pressed into a mixture of new and 2-year-old French Oak barrels. ​

The Shiraz was selectively handpicked from 80-year-old vines.

Gently destemmed and cold-soaked for 14 days.

Slowly fermented for a further 14 days, then gently pressed into a mixture of new and 2-year-old American Oak barrels.
